Sicilian Spinach Salad
INGREDIENTS:
1/2 cup Basil Olive Oil
1/2 cup Sicilian Lemon Balsamic Vinegar
2 T red onion, minced
3 T fresh basil leaves, torn
1 clove garlic, crushed and minced
6 C fresh spinach
3 oz goat cheese in pieces
1/3 cup sun dried tomatoes, sliced thin
3 T pine nuts, toasted
Sea salt, to taste
Fresh ground pepper, to taste
DIRECTIONS:
Combine dressing ingredients & whisk (Basil Olive Oil, Sicilian Lemon Balsamic Vinegar, onion, basil, garlic, sea salt & pepper)
Toss spinach with cheese, sun dried tomatoes & pine nuts
Dress with vinaigrette & serve
