Spring Poppy Salad

INGREDIENTS:

  • 3 eggs, hard boiled

  • 2 cups butter lettuce

  • 2 cups arugula

  • 2 radishes, shaved

  • 2 stalks of asparagus, shaved into ribbons

  • 1 cup snap peas, sliced

  • 1/2 cup fennel, shaved

  • 1 T fresh mint

  • 1/4 cup Milanese Gremolata Olive Oil

  • 2 T Sicilian Lemon Balsamic Vinegar

  • 1/4 tsp sea salt

  • 1 T shallot, minced

  • 1/4 tsp dijon mustard

  • 2 tsp mayonaise

  • 1 T poppy seeds

DIRECTIONS:

  • In a large bowl, combine the butter lettuce, arugula, radishes, snap peas, fennel and mint

  • In a small bowl, whisk together olive oil, vinegar, salt, shallot, mustard, mayo and poppy seeds. Divide salads between 2 bowls, top with hard boiled eggs and dressing. Serve immediately!
