FRISEE SALAD WITH MAPLE BACON VINAIGRETTE
INGREDIENTS:
7 Cups Frisee salad
3 cups endive, sliced
1 cup radicchio salad, sliced
6 slices bacon
1/4 cup shallots
1 tsp dijon mustard
Salt & pepper
3/4 cups bleu cheese, crumbled
DIRECTIONS:
Toss all salads together in a large bowl. Cook bacon and drain on paper, saving 1 T of drippings. Crumble bacon.
Sautee shallots in the bacon drippings for about 4 minutes.
In a small bowl, whisk balsamic, mustard, olive oil, shallots, salt & pepper together to make the dressing and drizzle over salad, then add crumbled bacon and bleu cheese to top.
