Buttery Whole Wheat Banana Bread

Prep: 20min / Cook: 50-60 min / Serves: 3-4

INGREDIENTS:

  • 1 Cup all-purpose flour

  • 1/2 Cup whole wheat flour

  • 1 t salt

  • 1 t cinnamon (optional)

  • 6 T Butter Olive Oil

  • 2/3 Cup sugar

  • 2 large eggs, lightly beaten

  • 1 Cup mashed very ripe bananas (about 2)

  • 1/2 Cup toasted chopped walnuts or pecans (optional)

DIRECTIONS:

  1. Preheat oven to 350. Thoroughly grease a standard loaf pan with 1 t of olive oil

  2. in a large bowl, whisk together all-purpose flour & whole wheat flour, salt, baking powder & cinnamon together thoroughly

  3. In a separate bowl, blend remaining olive oil, sugar & eggs together

  4. Fold in mashed bananas & nuts until combined

  5. Combine the wet ingredients in the bowl with the dry ingredients until just incorporated - do not over mix. Scrape the batter into pan & spread evenly

  6. Bake until a toothpick inserted in the center comes out clean, 50-60 minutes

  7. Let cool in the pan on a rack for 5-10 minutes before unfolding to cool completely on the rack
